Moroccan Lamb Chops with Garlic Parmesan Rosemary Fries

Grilled meats are a popular thing to eat in Morocco, so today I chose to make Moroccan spiced Lamb chops. I've used ingredients that you can often find in a lot of Moroccan dishes such as cumin and turmeric. I'm going to use a cast iron griddle pan to cook mine but you can use a regular pan, the oven or even a cast-iron skillet.
Ingredients:
For the lamb chops
4 lamb chops
1 tsp olive oil
1/2 tsp smoked paprika
1/2 tsp turmeric
1/2 tsp salt
1/2 tsp cumin
1/2 tsp cayenne pepper
1/4 tsp black pepper
1/2 an onion cut into slices
A handful of parsley cut finely
A handful of coriander cut finely
For the fries
5-6 potatoes
2 tsp salt
1/4 cup parmesan
3 tsp garlic granules
1/2 tsp black pepper
Rosemary
Olive oil
Procedure
4-24 hours before you want to cook the lamb, wash the lamb and add all the ingredients under the 'for the lamb' section
Cover with cling film and put in the fridge till you are ready to cook
Wash, peel and cut your potatoes into your desired thickness (or leave the skin on for skin on fries)
Bring some salty water to a boil and boil your potatoes for about 3 minutes, you don't want them too soft to the point where you could mash them.
Drain the potatoes and add cold water to them and leave to sit for about 3-4 minutes
Transfer them to a baking dish and pat dry
Add a drizzle of olive oil, the salt, parmesan, garlic, black pepper and rosemary (for the amount of rosemary I've left it up to you as some people aren't massive fans, but for mine I just sprinkled an even layer over my fries) and mix your fries so all fries are evenly coated
Put in the oven for about 25 minutes at 200c till they are golden brown
5 minutes before the fries are ready heat up your skillet or pan and add a little bit of olive oil
When the pan is nice and hot remove the onions from the lamb and add your lamb to the pan.
Remember to not overcrowd the pan so depending on the size of the pan add however many will fit with a comfortable amount of space around each one.
Cook for about 3 minutes on each side and this will give you lamb that is medium done on the inside
