Ingredients for Cornbread
140g fine cornmeal
140g flour
70g granulated sugar
2 tsp baking powder
1/2 tsp bicarbonate of soda
375ml buttermilk
2 eggs
113g melted butter + 2 tbsp
Directions
To a mixing bowl, add the cornmeal, flour, granulated sugar, baking powder and baking soda and mix till combined
Melt the butter and let cook slightly
Add the buttermilk and 2 eggs and mix
Add the melted butter 1/3 at a time and mix until just combined each time you add butter
Do not overmix!
If you find your batter is a bit too thick just add some milk until its pourable like the consistency in the video but you shouldn't need to
Preheat the oven to 180C fan/ 200c/ 400F/ gas 6
Add 2 tbsp unsalted butter to your dish and add to the oven to melt
Add the mixture to the dish and smooth the top of the cornbread
Place in the oven and cook for 25 minutes or until golden brown on top, to see if its cooked put a toothpick into the centre and it should come out clean
