Cornbread

Ingredients for Cornbread

  • 140g fine cornmeal

  • 140g flour

  • 70g granulated sugar

  • 2 tsp baking powder

  • 1/2 tsp bicarbonate of soda

  • 375ml buttermilk

  • 2 eggs

  • 113g melted butter + 2 tbsp

Directions

  • To a mixing bowl, add the cornmeal, flour, granulated sugar, baking powder and baking soda and mix till combined

  • Melt the butter and let cook slightly

  • Add the buttermilk and 2 eggs and mix

  • Add the melted butter 1/3 at a time and mix until just combined each time you add butter

  • Do not overmix!

  • If you find your batter is a bit too thick just add some milk until its pourable like the consistency in the video but you shouldn't need to

  • Preheat the oven to 180C fan/ 200c/ 400F/ gas 6

  • Add 2 tbsp unsalted butter to your dish and add to the oven to melt

  • Add the mixture to the dish and smooth the top of the cornbread

  • Place in the oven and cook for 25 minutes or until golden brown on top, to see if its cooked put a toothpick into the centre and it should come out clean
