Shakshuka

Ingredients

  • 1/2 medium onion finely chopped

  • 6 garlic cloves finely chopped

  • 1x 400g peeled plum tomatoes

  • 1x 400g Mutti finely chopped tomatoes

  • 1tsp cumin

  • 1tsp paprika

  • 1tsp mixed herbs

  • 1/2tsp turmeric

  • 1/2tsp chilli powder

  • 1/2tsp - 1tsp granulated sugar

  • Salt & pepper to taste

  • 4 medium eggs

  • Feta cheese

  • Parsley

  • Bread to serve


Directions

  • Add some olive oil to a pan over medium heat & add the onion

  • Cook until softened

  • Add the garlic and cook for about 30 seconds

  • Add the plum tomatoes to a bowl and squash with your hands

  • Add both cans of tomato and bring to a simmer

  • Add the spices

  • Simmer for about 10 minutes or until the tomato sauce has thickened slightly

  • Taste for seasoning and add more if needed (all seasonings are just a guide! I will usually taste my food & add a sprinkle more when cooking.) Taste your food as you go!

  • If there is still the tomato/acidic taste feel free to add sugar at this point. Start with 1/2tsp

  • Create 4 wells in the sauce and crack the eggs inside

  • Cook for about 5-10 minutes with the lid on depending on how you like your eggs

  • Add salt and pepper to the eggs

  • Sprinkle some parsley and feta over your shakshuka

  • I like to let my shakshuka rest for a few minutes before I eat, I honestly think it gives the flavours time to intensify!

  • Serve and enjoy with some crusty bread!
