Honey Chipotle Chicken Skewers

Ingredients

· 500g chicken thighs

· ½ tsp Paprika

· ½ tsp Cumin

· ½ tsp Cayenne Pepper

· ½ tsp oregano

· Salt & pepper to taste

· 4 garlic cloves crushed

· Juice from 1/2 a lime


For the sauce:

· 110g Chipotle sauce

· 50g honey

· 20g Juice from the chicken in the oven

· 1tbsp Butter

3 garlic cloves lightly smashed


Directions

  • Cut the chicken thighs into small pieces

  • Season the chicken with the ingredients mentioned above as well as a drizzle of olive oil and let marinate for as long as possible

  • When you're ready to cook, preheat the oven to gas mark 6/400F/200C/180 Fan

  • If you're using metal skewers lightly coat them with olive oil as well as the wired rack you will be placing your skewers on. If you are using wooden/bamboo skewers soak them in warm water for 30 minutes before cooking and lightly oil the wired rack as well.

  • Add the chicken to the skewers, you can add as many pieces as you want to each skewer just make sure they are tightly packed together

  • Cook until the chicken is cooked through about 20-30 minutes. Remember to keep the juice from the chicken as we need it for the sauce

  • In a saucepan add a tbsp of butter as well as 3 cloves of garlic. Cook until fragrant, about 30 seconds to a minute and remove from the butter.

  • Add the chipotle sauce, honey and juice from the chicken or chicken stock and simmer for about 5 minutes

  • Brush the sauce onto the chicken and add back into the oven for about 2-3 minutes.

  • Serve with the remainder of the sauce so you can use for dipping as well as lime.

  • Serve and enjoy!
