Fluffy Blueberry Pancakes

Hey my lovelies!


It feels like I haven't been on here for such a long time but I'm finally back and I'm so excited!

Today I have a delicious recipe for fluffy blueberry pancakes, these are great when you're getting a bit bored of regular buttermilk pancakes. Biting into the blueberries adds a whole different flavour. Feel free to swap out the blueberries for any other berry or even chocolate chips.


Below are some tips for when you are making this recipe:

  • Don't overmix the batter, this is key to perfect fluffy pancakes, it's okay if you still have bits of flour.

  • Low - medium heat is best for these pancakes, the last thing you want is crispy pancakes on the outside but raw batter on the inside.

  • Melt the butter first and let it cool whilst you are prepping all your other ingredients.

For the wet ingredients

1 1/4 cup flour

2 tbsp sugar

1/2 tsp baking powder

1/2 tsp baking soda

A pinch of salt


For the dry ingredients

1 1/4 buttermilk

1 egg yolk

71g unsalted butter

1 1/4 tsp vanilla extract


Procedure:

  • Melt your butter and once melted transfer into a cup so it can cool

  • In a bowl add all your dry ingredients and mix so they are just combined

  • In a second bowl add your buttermilk, egg yolk, melted butter and vanilla extract and whisk until the ingredients are combined

  • Add your wet ingredients to your dry ingredients and fold until just combined (do not over fold, as soon as you see everything combined, stop)

  • Add your egg white and fold until the egg white has mixed in with everything else (again as soon as you see they have combined, stop)

  • Leave to sit for 15 minutes

  • Put your pan of choice on medium heat and let it heat up

  • Once hot, add a teaspoon of butter to the pan and spread it around the pan

  • Pour 1/4 cup of pancake mix to the pan and use the back of the cup or a spoon to lightly spread the mix to make a perfect circle shape. Depending on the size of the pan you are using you can make a few at a time

  • Add a few blueberries to the pancakes

  • After 2-3 pancakes make sure to add another teaspoon of butter

  • Let the pancakes cook and when you see the edges starting to brown, its time to flip your pancake

  • Serve and enjoy!
