Fluffy Buttermilk Pancakes

There's no need to rely on pancake mix or your next trip to America to eat fluffy buttermilk pancakes. This easy and delicious recipe will have you set! The amazing thing about pancakes is not only are they so delicious but you can have them so many times and never get bored as you can always have something different on them.


I chose to have mine with strawberries and maple syrup but you can have Nutella, honey, nuts, or so many other toppings.


Tips:

  • For this recipe, I used 3 tablespoons of sugar but you may like them more sugary so once you have made one pancake, try it and see if you would like to add more

  • Make sure your pan is nice and hot before you start to get perfectly cooked pancakes

  • Make sure the heat from your cooker is not too high as the pancakes will be golden on the outside but the inside won't be cooked.


Ingredients:

Dry

310 plain flour

3 tbsp caster sugar

Pinch of salt

1 tsp baking powder

1 tsp baking soda


Wet

600 ml buttermilk

2 eggs (separated into yolks and whites)

113g unsalted butter (melted)

2 tsp vanilla extract


Unsalted butter for cooking your pancakes

Your choice of toppings


Procedure:

  • Melt your butter and once melted transfer into a cup so it can cool

  • In a bowl add all your dry ingredients and mix so they are just combined

  • In a second bowl add your buttermilk, egg yolks, melted butter and vanilla extract and whisk until the ingredients are combined

  • Add your wet ingredients to your dry ingredients and fold until just combined (do not over fold, as soon as you see everything combined, stop)

  • Add your egg whites and fold until the egg whites have mixed in with everything else (again as soon as you see they have combined, stop)

  • Leave to sit for about 30 minutes

  • Put your pan of choice on medium heat and let it heat up

  • Once hot, add a teaspoon of butter to the pan and spread it around the pan

  • Pour 1/4 cup of pancake mix to the pan and use the back of the cup or a spoon to lightly spread the mix to make a perfect circle shape. Depending on the size of the pan you are using you can make a few at a time

  • After 2-3 pancakes make sure to add another teaspoon of butter

  • Let the pancakes cook and when you see bubbles starting to appear, its time to flip your pancake

  • Add your choice of toppings and enjoy!
