To me the weekend means two things, sleeping till 12 and brunch! I can't lie this brunch was too good and it went down a treat in my house. Let's be honest anything with pancakes is a good meal. Below are some tips/suggestions for when you are making this.
In order for you to get everything out in good timing whilst still warm, I suggest you make the pancake batter, let it sit whilst your peeling and cutting your potatoes, start cooking the potatoes and then start making your pancakes. 10 minutes before your potatoes are ready start making your bacon and eggs
When making your pancakes please please please don't overmix your batter! When you pour your liquid ingredients into your dry ingredients fold lightly and stop when about 95% is combined. If you still see some pockets of flour it's fine! The same applies to when you are mixing your egg whites in, mix them in but as soon as you see they have combined stop mixing!
When making pancakes the heat of your pan is very important, at first you'll want to have it at medium heat to heat up but you'll find when you pour your batter into your pan you'll want to reduce to low - medium heat, this will ensure that your pancakes cook on the inside as well as the outside
To keep your pancakes warm whilst you're making the rest, place a cooling rack over a baking dish, preheat your oven to 80C and place them on the cooling rack in the oven after you've made each one

Ingredients
For the pancakes
Dry
310 plain flour
3 tbsp caster sugar
Pinch of salt
1 tsp baking powder
1 tsp baking soda
Wet
600 ml buttermilk
2 eggs (separated into yolks and whites)
113g unsalted butter (melted)
2 tsp vanilla extract
Unsalted butter for frying
Maple syrup to serve
For the breakfast potatoes
5 potatoes peeled and chopped into squares
1 tsp paprika
1 tsp cajun seasoning
1 tsp garlic granules
Salt and pepper to taste
Enough olive oil to cover the bottom of the pan
Sides
Bacon ( turkey, pork, beef )
For the eggs
2 eggs
25 ml milk
1 tsp butter
Optional: you can add cheese to your eggs for cheesy eggs!
Instructions
Melt your butter and once melted transfer into a cup so it can cool
In a bowl add all your dry ingredients and mix so they are just combined
In a second bowl add your buttermilk, egg yolks, melted butter and vanilla extract and whisk until the ingredients are combined
Add your wet ingredients to your dry ingredients and fold until just combined (do not over fold, as soon as you see everything combined, stop)
Add your egg whites and fold until the egg whites have mixed in with everything else (again as soon as you see they have combined, stop)
Leave to sit whilst you're prepping your potatoes
Wash, peel and cut your potatoes into squares
Heat your pan with olive oil on medium heat, once heated add your potatoes
Add your salt, pepper, cajun, paprika and garlic seasoning. Mix until all potatoes are coated with seasoning
Cook for about 20 - 30 minutes. If you find your potatoes start to stick at any point add some more olive oil
Every few minutes you want to stir your potatoes
Put your pan of choice for your pancakes on medium heat with 1 tsp of butter and let it heat up
Set up your cooling rack in the oven and preheat the oven to 80C
Once your pan is hot, pour 1/4 cup (or 1/3 cup for bigger pancakes) of pancake mix to the pan and use the back of the cup or a spoon to lightly spread the mix to make a perfect circle shape. Depending on the size of the pan you are using you can make a few at a time
Place each pancake as you've made them in the oven to keep warm whilst making the rest
After 2-3 pancakes make sure to add another teaspoon of butter
When your potatoes are nearly ready start making your bacon, I used turkey bacon and I placed them in the oven for 10 minutes at 180C
For the eggs add a tsp of butter to a pan and heat to a medium heat
In a separate bowl crack the eggs, add your milk, salt & pepper and mix with a fork
Pour the egg mixture to your pan, let it sit for a few seconds and stir lightly with a wooden spoon (see insta post for example)
Serve and enjoy!
You can pour maple syrup over your pancakes to make them even nicer
