Brown Stew Chicken

Today’s recipe is this Brown Stew Chicken, its so simple yet so tasty. It’s one of those dishes that takes little time and work to prepare but you end up with someone amazing in the end. As always try to marinate the meat the night before for the best flavour!

Ingredients

  • 1 kg of chicken

  • 1 tbsp of all purpose seasoning, chicken seasoning, garlic & coriander/ garlic granules

  • 1/2 tbsp paprika

  • Salt & pepper to taste

  • 1 tsp browning

  • 2 sprigs of thyme

  • 2 spring onions roughly chopped

  • 1 onion cut into slices

  • 2 peppers cut into slices

  • 2 garlic cloves finely chopped

  • 1 tbsp ketchup

  • 1tsp brown sugar


Direction

- Season your chicken with the all purpose, chicken seasoning, garlic, paprika and browning. Add half the onion, the spring onion, thyme and add about a tbsp of oil and mix until everything is combined. - Cover and place in the fridge.

- A few hours before you are ready to cook add one pepper and mix into the meat.

- Cover and place in the fridge till you are ready to cook. - When you are ready to cook add enough oil to just cover the bottom of your pan

- Place the pieces of chicken without any of the veg in the pan and you want to brown them for a few minutes on each side. If you add the veg at this point it will burn. You don’t want to cook the chicken you just want some colour on them. You may have to do it in batches depending on the size of your pan. - Place the browned pieces of chicken on a separate plate and just empty the excess oil from the pan so your gravy isnt too oily. - You then want to add your chicken back into the pan

- In the bowl that you have your veggies add about 500ml of water and swirl everything around with the vegetables so the water can get the seasoning. You can add more water if you want, the more water the more gravy you’ll get but just remember it’ll take longer to cook. As a rule of thumb you want the water to cover the chicken. - Pour this over your chicken bring to a boil and then lower to a simmer

- Add the garlic

- Cover the pot and cook for 20 minutes

- After 20 minutes add the ketchup and sugar and cook for another 20 minutes uncovered.

- At this point you can add the other pepper and other half of the onion if you want more whole pieces of veg in your gravy

- If you’re gravy isn‘t thick enough you can cook it for longer or add a cornstarch mix.

- If adding cornstarch in a separate bowl add 1tbsp of cornstarch and then enough water to turn it into a liquid. Mix it so there are no lumps and add this mixture to your pot.

- Taste your gravy and see if it needs any further seasoning

- Serve with rice or rice and peas and enjoy!
