Carne Asada Tacos

These Carne Asada Tacos are just perfect, from the perfectly cooked steak to the spicy Salsa Roja everything just went together beautifully! Such a fresh and tasty meal but also really light and healthy, and who doesn't want that?
For this recipe you can use Skirt steak but its a bit harder to find especially in Halal butchers near me so I just went for Rib Eye steak. The marinade used in the recipe has a lot of acids in it so I wouldn't recommend marinating the meat for long as it can make your meat quite tough. I marinated mine whilst I was preparing everything else and it was more than okay.

Servings
9-12 tacos depending on how much steak you add to each taco
Ingredients
For the steak marinade
30 ml juice from an orange
15 ml juice from a lime
Zest of 1/2 a lime
1/4 cup olive oil
2tbsp white wine vinegar
2 garlic cloves roughly chopped
1/2 tsp oregano
1/2 tsp chilli powder
1/2 tsp paprika
1/2 tsp cumin
20g coriander roughly chopped
Salt & pepper to taste
450g rib eye steak (for me this was 2 steaks)
For the Salsa Roja
2 tomatoes
5 chile de arbol
2 chile pasilla
2 garlic cloves
1/4 of a white onion
Salt & pepper to taste
For the Avocado Crema
1 avocado
1/2 cup creme fraiche
3 garlic cloves peeled
30g coriander
Splash of water
1 tsp olive oil
Juice of 1 lime
Tortillas
Coriander to garnish
Lime to squeeze on tacos
Directions
Mix all the ingredients for the steak marinade together in a bowl
Pat dry your steak & add marinade to the steak
Cover and place in the fridge till you are ready to cook (take it out 20 minutes before cooking so it can come up to room temp)
When you're ready to cook, on a high heat add your steak to a cast iron pan or a griddle and cook your steak for 2 minutes on each side (of course if you want your steak more cooked or if the steak you're using is thicker adjust the timings accordingly)
Leave to rest for about 10 minutes before cutting into strips or cubes & assembling your tacos
For the salsa
Whilst the steak is marinating cut your tomatoes into quarters
Take off the stem of your chillies but leave the seeds inside
Peel and crush the garlic cloves
In a pan add some oil about 2 tablespoons and add your tomatoes, fry them for 1 minute
After 1 minute flip the tomatoes and add in your onion and garlic
Fry till the tomatoes have softened and the onion is translucent
Add the tomatoes and onion to a blender and add your chilles into the pan, fry off for about 1-2 minutes but no longer as they will make your salsa bitter
Add the chillies and the garlic to the blender and blend everything till its all blended well
For the Avocado Crema
Add all the ingredients mentioned above and blend till you get a smooth consistency
Add a bit more water if you need some help to get a smoother consistency
Serve and enjoy!
