Chicken Gyro

Hi my lovelies!
Todays recipe is one of my favourite things to eat, especially during the summer in Greece. I honestly can't get enough of this recipe, from the beautifully soft chicken to the warm, fluffy bread its honestly my go to meal!
I chose chicken thighs for this recipe as I find them much softer but if you want to use chicken breast to make this meal a bit healthier that is absolutely fine.

Ingredients for the chicken
1kg chicken thighs
1 1/2 cups greek yoghurt
120ml olive oil
Juice of 1 lemon
3 garlic cloves finely chopped
1 bunch of coriander finely chopped
4 sprigs of thyme
1 tbsp paprika
1 tbsp cumin
1 tbsp cayenne pepper
1/2 tbsp cinnamon
Salt & pepper to taste
1 onion peeled and both ends cut off
Ingredients for the Tzatziki
250g greek yoghurt
5 mint leaves finely chopped finely
3/4 of a large cucumber grated
3 garlic cloves finely chopped
Juice of 1/2 a lemon
Salt to taste
Ingredients for the Oregano Fries
6-8 potatoes depending on size
Salt to taste
Oregano to taste
For the bread
1kg plain white flour
7g active yeast
1 tsp brown sugar
1 tsp salt
600ml warm water
4 tbsp olive oil
Other ingredients
Two tomatoes sliced into strips
One onion sliced into thin slices
Directions for the chicken
To your wash and dried chicken add all the ingredients for your chicken apart from the onion and mix until the chicken is nicely coated
When you're ready to cook the chicken preheat the oven to 160c
Run two wooden skewers under the tap
On a baking tray position your skewers vertically and add a chicken thigh on each skewer, for the next chicken thigh you add on each skewer you want to rotate it slightly so that the skewer is balanced. Repeat this process until you've added all the chicken
Once you've added your chicken join the skewers together and pierce the onion through and pull it down till its touching the chicken
Add to the oven and let it cook for about 1 1/2 hours - 2
Directions for the bread
Add 600g of flour to a bowl
Add the yeast and sugar to a cup and add 300ml warm water and mix until they have dissolved
Add the salt to a separate cup and add 300ml warm water and mix
Add the yeast and sugar mixture and the salt mixture to the flour and start combining it all
Add 4 tbsp of olive oil to the mixture and start kneading
Slowly add the rest of the flour to the mixture and knead the dough until it has elastic texture
Cover and let it rest in a warm place for 40 minutes
Turn out the dough onto a lightly floured work surface and divide the dough into 8 equal pieces, you should keep adding flour to your surface
Start rolling out the pieces of dough into circles adding a light amount of flour to each one so they don't stick to your surface
Warm a cast iron skillet or a pan over medium-high heat and grease it lightly with olive oil.
Bake each pita for 1 minute, until you see bubbles, flip and cook on the other side for 1-2 minutes. Each side should have a turned a nice golden brown
Keep the pitas covered until you are ready to eat
Directions for the Tzatziki
Shred the cucumber over a paper towel and squeeze the excess liquid out
Combine all the ingredients for the tzatziki in a medium bowl and stir well.
Cover and place in the fridge until you are ready to eat
Directions for the Oregano Fries
Heat the oven to 200c and cut the potatoes into long fries shapes, the thickness is up to you, but the thicker you make them the longer they will take to cook
Rinse the potatoes, dry them and place them onto a baking tray. Toss them with olive oil, salt and oregano to taste
Roast for about 45 minutes turning now and then
When they are ready, sprinkle some more salt on top to serve
When you're ready, assemble your gryo by adding tzatziki to your pita, some chicken, a few slices of tomato and onion and some oregano fries.
Serve and enjoy!
