Jerk Chicken Birria Tacos

Ingredients
For the chicken
500g chicken thighs
1/2tbsp mixed herbs
1/2tsp chicken seasoning
1/2tsp all purpose seasoning
1/2tsp onion powder
1/2 tsp garlic powder
Salt and pepper to taste
2tsp jerk seasoning
1/2 tsp browning
2 plantains
Vegetable oi
8 mini tortilla wraps
1 onion diced
Monterey jack cheese (Asda sell this now) or any cheese you like - pepper jack, cheddar, mozzarella etc
For the sauce
230g ketchup
100g brown sugar
60g meat juices
150ml water
1 tbsp jerk seasoning
¼ tsp salt /to taste
A pinch of baking soda
Directions
Season the chicken with the spices mentioned above and let marinate as long as possible.
Preheat the oven to Gas mark 6/400F/200C or 180 fan
Add into a baking dish and bake for about 40 minutes -1 hour. Throughout the cooking process drain any excess water and keep to the side, we'll use this for our sauce
Once your chicken is cooked, cut into small pieces
Cut your plantain into small cubes
In a saucepan on low-medium heat add the ketchup and brown sugar and mix until combined. From my chicken I got 60ml of juice if you didn't get this much out of the chicken feel free to use chicken stock.
Add the meat juices/chicken stock to the sauce along with the water and bring to a light simmer.
Add the jerk seasoning and simmer for about 5 minutes. Taste for seasoning, you may not need any salt and feel free to add more jerk seasoning to make it spicier.
Add a pinch of baking soda (just a pinch!) to cut the acidity of the ketchup (it will start to fizz, thats completely normal!)
Add vegetable oil to a pan and bring to medium heat, fry your plantain in batches ensuring you mix as they're frying so they don't burn
Drain on kitchen paper until you're ready to assemble your tacos
To assemble your tacos, add about a tbsp of vegetable oil to your pan every 2-3 tacos, if you notices they start to stick add a bit more
Add your taco to the sauce, tap off any excess sauce and add to your pan
Add cheese, chicken, plantain, more cheese and onion. Fold your taco and cook on both sides. If any of the filling comes out just tuck it back into the taco.
Repeat and save some sauce to dip your tacos in.
