Chicken/shrimp and sausage Alfredo

Ingredients

225g raw king prawns or 200g chicken thighs

1/2tsp chicken seasoning

1/2tsp cajun seasoning

1/2tsp onion powder

1/2tsp garlic granules

1/2 tsp mixed herbs

Salt & pepper to taste

2 sujuk sausages

240g tagliatelle or fettuccine

2 chicken stock cubes

2 tbsp unsalted butter

2 large garlic cloves (or 4 small ones)

560ml double cream (heavy whipping cream)

1/3 cup grated parmesan

Fresh parsley



Directions

  • Wash and devein your prawns/ wash & cut your chicken

  • Season with the seasonings mentioned above and let it sit in the seasoning whilst you prepare your other ingredients

  • Cut your sausages diagonally

  • Finely chop your garlic cloves

  • In a pot add the water and bring to a boil, once its boiling add your chicken cubes and pasta and let the pasta cook as per packet instructions.

  • Into a pan, that'll be big enough to fit your sauce and pasta heat up some oil over high heat. Just enough to cover the bottom of your pan

  • Add your prawns and cook for 1 minute on each side

  • If using chicken, add and leave untouched for 3 minutes, then cook for another few minutes on the other side

  • After you've cooked them on both sides remove them from the pan and set them to the side

  • Add your sausages into the same pan and heat them up. The sausages I use are already cooked hence why I only have to heat them up

  • Remove from the pan and set to the side

  • Lower the heat to medium heat and in the same pan add the butter and let it melt

  • Once melted add the chopped garlic and cook for about 30 seconds

  • Take 1/4 cup of liquid out of the pasta and add to the pan to deglaze the pan

  • After it reduces add the cream and mix till everything is combined

  • Bring the cream to a simmer and add the parmesan cheese and 1/2 tsp of cajun seasoning

  • Mix until well combined

  • Lower the heat to low and let the sauce cook for about 5 minutes. After the 5 minutes taste for seasoning. At this point, I usually add a bit of my mixed herbs, garlic seasoning and salt

  • Add in your drained pasta and top with the prawns and sausage let this all cook together for about 2 minutes

  • Sprinkle some more parmesan on top and fresh parsley

  • Serve and enjoy!
