Spicy Fried Chicken Wings

Fried chicken is honestly one of my favourite foods and it wasn't till recently that I started making my own and I have never looked back. In this recipe, every part of the chicken is tasty as every part of the process gets seasoned - the chicken, the buttermilk and the flour! For this recipe I used niblets but you can use anything from thighs to wings for the best juicy chicken.
Below are some tips for when you are making this recipe:
As the hot sauce will be mixed with the buttermilk, it won't be as spicy as you think. So I would recommend going for a hotter sauce than you usually would. (I will be doing this next time as I don't think it was hot enough)
You can make the chicken even hotter by adjusting the amount of cayenne pepper and black pepper that you use
If you don't want this chicken to be hot at all then just take away the hot sauce from the recipe
For best results, let the chicken sit in the seasoning for a few hours - overnight

For the chicken
1kg chicken niblets
1.5 tbsp paprika
1.5 tbsp all-purpose seasoning
1.5 tbsp chicken seasoning
1.5 tbsp garlic & coriander
1/4 cup hot sauce
Enough buttermilk to cover the chicken (I used 2x 284ml)
For the flour
2 cups flour
1 cup cornflour
2 tsp all-purpose seasoning
2 tsp paprika
1 tsp chicken seasoning
1 tsp garlic & coriander
2 tsp cayenne pepper
Pepper to taste
For the sauce
113g butter
4 tbsp hot sauce
2 tbsp honey
Instructions:
Wash and dry your chicken, then pierce lightly with a fork
Add your paprika, all-purpose, chicken and garlic & coriander seasoning and mix
Add the buttermilk and hot sauce and mix so that all the chicken is coated.
Cover and let them marinate for your chosen time
30 minutes before you are ready to fry your chicken take it out of the fridge so that your chicken can cool down
Add your vegetable oil to your pan and let it heat up, a good way to see if your oil is hot enough is to add the end of a wooden spoon to the oil and if bubbles start to appear around the spoon it's ready for your chicken
When you are ready to fry your chicken add the flour, cornflour, all-purpose, paprika, chicken, garlic & coriander, cayenne pepper and pepper to a bowl and mix well
Add the chicken to the flour mixture and make sure to really coat the chicken, press the tip of your fingers into the chicken when adding the flour to get nice and flaky chicken
Shake off excess flour gently and add chicken to the oil in batches. The chicken should take about 8-10 minutes, turn your chicken halfway through so that it browns evenly
Remember not to overcrowd your pan as you want the chicken to cook nicely and you don't want to take the temperature of the pan down too much
Remove the chicken when it's ready and drain any excess oil by putting some kitchen paper on a plate and placing the chicken on the kitchen paper
Whilst your chicken is frying start on your sauce. In a wok or a saucepan on a low - medium heat add your butter and melt. As soon as your butter has melted add your hot sauce and honey. Mix together well until the sauce is a nice, even and thick consistency
Add sauce to your chicken or enjoy some without!
